Riserva Ubud: A 16-Seat Wagyu Steakhouse in Kenderan

Riserva, the steakhouse inside Equipoise Resort in Kenderan, takes only 16 guests a night in a single sitting, open Tuesday to Sunday from 5pm to 10pm. NOW! Bali and Indonesia Expat announced its opening in August 2026. It runs independently, so you don't need to stay at the resort to eat here.

What's on the official menu

The PDF menu on the official site (checked September 2026) has four sections. Starters include Sakoshi Oyster with kiwi, jalapeño, yuzu and Avruga caviar, Hokkaido Scallops, Beef Tartare on potato pavé, a Duck Taco with smoked duck leg, BBQ Octopus and Wagyu Beef Tongue.

The stars are six wagyu cuts:

• Sanchoku Wagyu Picanha MB 8/9
• Stone Axe Wagyu Flank MB 8/9
• Phoenix Wagyu grain-fed T-bone 6/7
• Stone Axe Fullblood Wagyu Striploin MB 8/9
• Sir Harry citrus-fed Wagyu Ribeye MB 9+
• A5 Miyazaki Japanese Wagyu Striploin

Not a beef person? There's Charcoal Fish with black mussels and pil pil sauce, Lamb Shoulder with harissa, and a Heritage Pork Chop. Sides include Potato Gratin and Wild Mushrooms with lardo, and dessert runs to a Chocolate Delice with burnt honey ice cream.

An evening in seven chapters

The format is called An Evening in Seven Chapters: it starts at sunset with a gong ritual, a foot wash, Seven Tirta, a wariga reading, lungsuran canapés and a champagne sabrage before dinner. You pick a blade from the Seven Knives made by Balinese artisans and season with the Seven Salts, including Tejakula salt from North Bali. Dessert is served in the Aura Lounge.

The drinks list is overseen by sommelier I Putu Erawan Ari Widhiantika: cocktails like the Martini Salato (gin, onion vermouth, olive, caviar), a Temple Mango Ritual mocktail, and bottles from Two Islands Riesling up to Sassicaia 2020 and Opus One 2018.

What to know first

• No prices listed. The official menu carries no figures at all. With A5 Miyazaki and Opus One on the list, ask for prices on WhatsApp before booking a seat.
• Far from the centre. Kenderan is about 10 km from Ubud Palace, on narrow roads that are dark on the way back. Use a driver or Grab, not a scooter.
• Not flexible. One sitting that starts at dusk means you have to arrive on time, and it's closed on Mondays.
