Sangsaka, Kerobokan–Seminyak: A Journey Across the Archipelago from Chef Kieran Morland’s Wood-Fire Kitchen

The name Sangsaka loosely translates to “the pride of the Indonesian flag”, and the menu reads like a map of the archipelago. This modern Indonesian restaurant at Jl. Raya Pangkung Sari 100X, Kerobokan — down a back street near Seminyak — is run by Melbourne-born chef Kieran Morland and his wife Yunika Morland, who brings family recipes from her Javanese heritage. The technique is modern, the fire traditional: wood- and charcoal-fired ovens and grills sit at the heart of the kitchen.

Signature Dishes: One Plate, One Region

The menu is à la carte and changes with seasonal produce; every dish names the region that inspired it. A few picks from the menu on the official website:

  • Buntut Menyatnyat Kintamani — oxtail in a steamed bun with sambal embe, around IDR 45k per piece.
  • Pangsit Udang Sangsaka — slipper lobster dumpling with red pepper laksa and torch ginger, around IDR 95k per piece.
  • Terong Woku Manado — smoked eggplant with turmeric and kemangi basil, around IDR 100k; a meat-free choice.
  • Pipi Sapi Kalio Minangkabau — beef cheek rendang with cassava leaves, around IDR 280k.
  • Bebek Asap Aceh — smoked duck with banana blossom and tamarind, around IDR 320k.

Some dishes contain pork (for example Kucit Siobak Singaraja and Nasi Goreng Merah Buleleng), so tell the staff if you avoid it. Prices exclude 10% tax and 7% service; for two people sharing several plates, expect roughly IDR 900k–1.5 million before drinks.

Atmosphere, Hours and the Di Atas Rooftop Bar

Sangsaka is dinner-only, open daily from 17:30 to 23:00, with about 60 seats including an outdoor terrace. Directly above is Di Atas (“upstairs” in Indonesian), a small cocktail bar for around 30 guests — some of them on the rooftop — open 19:00–01:00, with cocktails around IDR 130–150k. It is ideal for a drink before or after dinner.

Reservation Tips

  • Book well ahead, especially at weekends; guest reviews mention tables filling up even on weekdays.
  • Arrive around 17:30–18:30 if you prefer a calmer atmosphere.
  • It sits on a back street, so a taxi or ride-hailing app is usually easier than hunting for parking.
