Babi guling may be Bali's icon, but there is a dish that is far older and far harder to find: bebek timbungan. Duck is rubbed with base genep, the complete Balinese spice paste of turmeric, kencur, galangal, chilli and shrimp paste, then cooked extremely slowly for hours until the meat falls off the bone. At Bebek Timbungan, now also trading as Bali Timbungan, on Jalan Sunset Road in Kuta, this heirloom recipe is served every day.
Why bebek timbungan is different
- An extremely long process: at least four hours of marinating, then slow cooking; sources put the total at 12 to 15 hours.
- Timbungan means cooked in bamboo: a traditional Tabanan technique where spiced meat is packed into a bamboo tube and cooked over a low flame.
- Old duck, not young duck: that is exactly why the cooking takes so long, and why the result is tender with a much deeper flavour.
- Not a tourist dish: it once appeared only at temple ceremonies and is now rare even for Balinese people.
What is worth ordering
- Bebek Timbungan — available as a half portion or a whole duck good for 2–3 people, roughly Rp135,000–Rp215,000.
- Ayam Betutu Gilimanuk style — heavily spiced chicken, also slow cooked, with real heat.
- Sate lilit ayam from Denpasar and sate lilit ikan from Karangasem, minced satay around Rp60,000.
- Megibung — the Karangasem communal feast for about three people, around Rp425,000++.
- Gurami Nyat-Nyat from Bangli and Kepiting Sere Limo crab for freshwater or seafood options.
What to know before you go
- Two floors, air-conditioned downstairs plus open-air seating, capacity around 215. Parking in the Sunset Road shophouse area, about ten minutes from Ngurah Rai Airport.
- The menu leans on duck, chicken, fish, lamb and vegetables. If you avoid pork, ask the staff directly and do not assume anything about certification.
- Some guests find the duck portion modest, and old duck has a strong, gamey character. If you are used to light fried duck, adjust your expectations.

A duck cooked for well over twelve hours tastes better when you are not rushing back to your room. AccessiaPass hotel vouchers help bring down the cost of staying around Kuta and Seminyak, which leaves more room in your food budget for genuinely traditional Balinese cooking rather than the tourist-friendly version of it.
