If one plate sums up Singaraja, it is siobak: slices of roast pork drenched in a thick brown fermented-soybean sauce. In Buleleng the name people mention first is Siobak Khe Lok on Jalan Surapati — a warung that has been selling since the early 1960s and is now run by the third generation of the Tan Khe Lok family.
Why This Siobak Is Special
- Slow-braised meat. Assorted pork cuts simmer with spices for hours before roasting, so they stay tender inside while the skin turns crisp.
- Thick tauco sauce. The sweet-savoury brown gravy made from fermented soybean paste and bone broth is what sets Buleleng siobak apart from ordinary Balinese roast pork.
- Simple sides. A portion usually arrives with fresh cucumber slices and crackling, eaten with warm steamed rice.
- A cross-cultural heirloom. Siobak was born where Chinese and Balinese kitchens met in Singaraja, not invented for tourists.
Tips Before You Go
- Arrive hungry — portions are generous.
- If you cannot decide, order the mixed plate to sample several cuts at once.
- Bring cash; old warungs like this do not always take cards.
- Avoid the peak lunch hour if you want an easier seat.
Access and Route
The original warung sits in central Singaraja, so it pairs easily with a walk around Lovina Beach, Pura Jagatnatha or the town market. From Lovina it is usually only a 20–30 minute drive; from Denpasar allow roughly 2.5–3 hours via the winding Bedugul route. The founding family now runs several branches in Singaraja and Denpasar, but long-time customers still treat the Jalan Surapati outlet as the original home.
