Carbón Ubud: Location, Prices, Hours, and Do You Need to Book?

Carbón, a live-fire Latin American restaurant founded in Jakarta in 2019, officially opened on 11 August 2026 at Alaya Suites Ubud on Jl. Raya Pengosekan. Some lists say July; that was the announcement, not the opening. Short answers to the most-searched questions, checked October 2026:

Where exactly is it?

Inside the Alaya Suites Ubud hotel in Pengosekan, on the southern edge of central Ubud. Don't confuse it with sister property Alaya Resort Ubud on Jl. Hanoman. It shares the compound with Baker Butcher Barista; both are run by MDA Restaurants.

What kind of food?

Mexican and Peruvian cooking over wood fire, using Bali produce such as chilli, corn, cacao, tropical fruit and fresh herbs. The kitchen is led by Chef Patron Andri Dionysius. Choose a tasting menu released in seasonal "volumes", or à la carte with Carbón Jakarta favourites plus Ubud-only dishes. Launch photos on NOW! How much does it cost?

No official prices have been published, either on the Alaya site or in launch coverage. The Alaya page simply points guests to WhatsApp. That's a real drawback on a tight budget: ask for the tasting menu price before you book a table.

What are the opening hours?

Dinner daily 5-10.30pm (NOW! Bali, September 2026). In the morning the same room serves breakfast for hotel guests.

Is there a bar or lounge?

Yes, the Carbón Agave & Cigar Lounge, with more than 40 tequila and mezcal labels, classic cocktails and hand-rolled cigars. Bring ID if you plan to drink. If smoke bothers you, ask where the cigar area is when you book.

Is there a dress code?

No written dress code. As it's inside a hotel, smart casual is safer than beachwear. Footpaths on Jl. Raya Pengosekan are narrow and busy with scooters at night; if you're staying nearby, walk with your phone torch on or ask for a pickup.

Who is it less suited to?

People who want to know the total cost before arriving, and anyone after a quick, cheap dinner. For South American food at a standalone restaurant in central Ubud, there's PICA on Jl. Dewi Sita.
