After ten years running CURE in Singapore — awarded a Michelin star in 2021 — chef Andrew Walsh has opened its Bali sibling inside Regent Bali Canggu, the first Regent resort in Indonesia, which opened in 2026. Guests walk through a dark, intimate passageway before the dining room opens onto an uninterrupted view of the Canggu coastline.
Why Everyone’s Talking About It
- A Michelin-starred chef with his own restaurant in Canggu; Chef de Cuisine Arvin Tjandra develops the menu alongside Walsh.
- Curing — salting, smoking, preserving — is the backbone of the menu: deeper flavour that still tastes fresh, served sharing-style.
- A fully open kitchen, so you can watch the chefs at work from your table.
- Coming soon: The Curing Room, a 12-seat chef’s counter for tasting menus.
What to Order
- Giant river prawn with tom yum relish and prawn bisque.
- Hokkaido scallop inspired by mangut, the Yogyakarta coconut stew, in a lighter form.
- The signature potato bread with crème fraîche butter and salmon roe; roasted aged duck with black sambal.
- Cocktails at Bar Nua (“nua” means new in Irish), built on kitchen techniques and local ingredients.
